Stylish Eats: Southwestern Turkey Soup w/ White Beans and Corn

SOUP, SOUP, SOUP! I thought I would get bored with eating soup for lunch the entire month but I was so mistaken. I told the hubs that I had a taste for some sort of white bean and corn soup. The Hubs held down the fort this weekend and found this amazing recipe from For the Love of Cooking; of course he switched things up a bit and I loved the way it turned out.
1 tsp olive oil
1/2 shallots, diced
4-5 cloves of garlic, minced
1 tsp cumin
1/2 tsp coriander
1/2 tsp oregano
½ tsp thyme
½ tsp Mrs. Dash
7-8 cups of chicken broth
1 bag of northern white beans, soaked and rinsed
4 diced tomatoes
2 lbs turkey breast
1 1/2 cups of fresh corn
1 chopped jalapeño
Handful of cilantro, chopped
Sea salt and freshly cracked pepper, to taste
Corn tortilla strips, topping
In a crockpot at add the olive oil, shallots and garlic. Cook until soft
Add Turkey and season with cumin, coriander, oregano, thyme and Mrs. Dash. Cook for 10 min. Then add chicken broth and cook for 2 hours.
Remove turkey and drain the fat from the broth with strainer. Set turkey aside and pour in soaked and drained beans. Cook for 4 hours.
Add turkey, corn, tomatoes, and cilantro cook on low for 45 minuets.
Preheat the oven to 350 degrees. Take a few corn tortillas and spray them with olive oil cooking spray on both side. Cut into small strips and place on a baking sheet. Season with Paprika and pepper if you like. Bake until golden brown on both sides, about 5-7 minutes.
Of course I added fresh avocado and lime; I love fresh lime in just about anything, and lunch was served. Let me know what you think. Happy, Healthy Eating!
